1 c. hot coffee
1 c. cocoa powder
1 c. cold water
3 c. cake flour
2 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. salt
2 sticks unsalted butter, softened
2 1/2 c. sugar
4 eggs
1 1/2 tsp. vanilla

Directions:
Directions:
In a bowl, combine and whisk coffee and cocoa powder until there are no lumps. Add the water and whisk until smooth. On a piece of wax paper, sift cake flour, soda, baking powder, and salt together. In a mixing bowl, beat butter and sugar on high speed until light and fluffy. Reduce speed to medium and slowly add in eggs and vanilla and cream well. Add the dry ingredients alternately to the butter and egg mixture with the cocoa mixture, mixing until smooth. Pour into prepared 10" cake pans and bake in a 350 degree oven for 30-35 minutes or until done.

Yields 9 c. of batter, where a cake mix usually gives you around 5 c. Fill with Cookies and Cream filling and ice with Whipped Buttercream... Oh so yummy!
