6 medium potatoes
2 c. shredded Cheddar cheese
1/4 c. butter
2 c. sour cream
1/3 c. chopped green onion
1 tsp. salt

Directions:
Directions:
Cook potatoes in skins; cool. Peel and shred coarsely. In a saucepan, melt butter and saute onion until soft but not brown. Add cheese and stir over low heat until cheese melts. Fold in sour cream and salt and continue stirring until mixture is well blended and smooth. Combine cheese mixture with shredded potatoes and turn into a greased 2 quart casserole. Dot the top with butter and sprinkle paprika. Bake at 350 for 35 minutes
