1 lb. pork tenderloin, sliced 1/4 in. thick, then halved into strips
1 tbsp. peanut oil
1 c. celery, sliced diagonally
1 c. green onion, sliced diagonally
1 c. fresh mushrooms, sliced
1/2 lb. snow peas, fresh or frozen
1 tsp. fresh ginger root, grated
2 c. cooked wild rice
1 tbsp. cornstarch
1 tbsp. dry sherry
3 tbsp. lite soy sauce
1/2 tsp. salt

Heat oil in large skillet or wok. Add pork strips and stir fry over high heat for about 2 min. Add celery, green onions, mushrooms, water chestnuts, pea pods and ginger root. Stir fry for about 5 min. over high heat until tender crisp. Add wild rice and toss to blend well. Combine cornstarch, sherry, soy sauce and salt. Pour over mixture in skillet, stir and cook until thickened.
