1 1/2 c. 100% bran cereal
1 c. skim milk
1 c. flour
1/4 c. brown sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
1/4 c. oil

Directions:
Directions:
Combine cereal and milk to soften; set aside. Stir egg and oil into cereal mixture. Mix together with dry ingredients; stir just to moisten. Do not overmix. Spoon into greased muffin pans. Bake at 400 15 to 20 min.
Variation: 1/2 c. raisins with 1/2 c. carrots, shredded.
