1 c. buttermilk or 1/2 c. yogurt and 1/2 c. skim milk 1 c. regular oatmeal 1/4 c. brown sugar 1 egg 1 c. all purpose flour 1/3 c. soft butter 1/2 tsp. salt 1 tsp. baking soda
Pour buttermilk on oatmeal; let stand a few minutes. Add remaining ingredients; stir just until mixed. Spoon into greased muffin pans. Bake 20 min. at 350º. Variations: 1 medium apple diced plus 1 tsp. cinnamon; 1/2 c.chopped dates and 1/2 c. cranberries; 1 c. blueberries.
