3 lg baking potatoes (1 1/2 lb.)
1/4 extra virgin oil
1/2 lb small tube pasta (pennette)
1/4 cup chopped flat-leaf parsley
3 Tbsp butter at room temperature

Directions:
Directions:
1.- Position a rack in the upper third of the oven and preheat at 450. Cut into 1/2 inch cubes. On a rimmed baking sheet, toss the potatoes with 3 Tbsp olive oil, salt and pepper to taste. Arrange in an even layer. Roast until gold and crisp at the edges 25-30 minutes. 2.- Meanwhile in a lg. pot of boiling water, salt and pepper to taste cook pasta until done. Drain and transfer to a bowl. Add the parsley, butter and remaining 1 Tbsp olive oil and toss, add the potatoes and toss again.
