2 cups canned garbanzo beans, drained
Btwn 3 tbsp to 1/3 cup tahini, to taste
Btwn 3 tbps to 1/4 cup lemon juice, to taste
1 teaspoon salt
2 cloves garlic, halved
1 tablespoon olive oil
1 pinch paprika
1 teaspoon minced fresh parsley

Directions:

1. Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.
2. Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.

The amount of tahini and lemon juice you use can make or break this dish- too little of either and it'll be bland; too much, well-yuck! Start off with a little and add until you like it. You can find tahini at most grocery stores now- mine sells it with the peanut butter, some others may sell it with the ethnic foods. The intensity of flavor between brands can vary, so again- start with a little and add more if needed. You can add more garlic, roasted red peppers, cayenne, crushed red pappers, jalapenos, cumin (really good), sun dried tomatoes, kalamata olives (use less salt)... have fun! Serve with pita, naan, chips, veggies, on toast or sandwiches... or lick it out of the bowl with your fingers!
