1lb. pkg. bulgar wheat (rinsed and drained)
1 c. cooking oil (I use canola)
3/4 c. lemon juice
3 cucumbers seeded and chopped.
3 fresh tomatoes chopped or 1lb grape tomatoes halved.
1 bunch green onions chopped
1 med. size green,red or orange bell pepper cut into lg. pieces.
1 c. fresh chopped parsley
2 T. fresh ground pepper
4 tsp salt

Thoroughly rinse bulgar wheat and drain. Add oil ,lemon juice, salt and pepper,and all chopped veggies. Refrigerate at least 8hrs. or overnight. Stir well before serving.
