1 T finely chopped onion
2 T butter
2 T finely chopped pancetta or ham
1 10 oz package chopped spinach - thawed
3/4 cup fresh ricotta
2/3 cup flour
2 egg yolks
1 cup grated Parmesan cheese
1/4 tsp. nutmeg

Directions:
Directions:
Saute onion in butter until pale. Add ham and saute just long enough to combine. Add spinach and cook 5 more minutes. Transfer contents to a bowl and add other ingredients.
Mix small pellets (flour hands first, this helps)
Drop pellets into boiling water and cook 3-5 minutes until 'done.'
Place gnocchi into a dish to keep warm. Can serve with cream sauce or simply sprinkle with parmesan cheese. (that's how we eat them!)
