8 sweet potatoes, cooked whole in oven in foil
1 can crushed pineapple, drained (reserve juice)
(pineapple is optional)
3/4 cup pineapple juice
6 tablespoons butter
1 and 1/2 cups brown sugar, lightly packed
1/4 teaspoon salt

Directions:
Directions:
Wrap each potato in aluminum foil and bake the sweet potatoes in the oven for 45 minutes. Remove from oven, remove foil and let cool for 1 hour. Remove potato skin by lightly scraping/peeling off with a small knife. Cut each potato in half length-wise and place in a buttered 13 x 9 baking dish. Cover potatoes with crushed pineapple. In a saucepan, melt the butter, and stir in the brown sugar, salt, and pineapple juice. Boil for 2 minutes and pour over the potatoes. Bake at 350 degrees for 30-45 minutes, basting with sauce every 15 minutes.
