1 lb. bag frozen extra sweet corn
4 tablespoons butter
1 large onion, chopped
1 red bell pepper, diced
4 large potatoes, diced and cooked
1/8 cup dried parsley (or 1/4 cup fresh)
3 cups milk
3 cups heavy cream
1/2 lbs. cooked bacon, crumbled
Salt, pepper, and butter to taste

Directions:
Directions:
Peel and dice 4 potatoes, and boil in water until tender, about 20 minutes. Cook bacon. Crumble and set aside. In a skillet, melt butter. Saute onions and pepper until soft, not brown. In a large soup pot, mix the corn, onions, pepper, diced potatoes, and parsley. Stir in the milk and cream, bring to a slow boil. Gently simmer 30-45 minutes, stir often. Add salt, ground pepper, and butter to taste. Remove from heat and stir in bacon pieces. Let stand about 10 minutes before serving.
