1 box corn muffin mix (8.5oz.)2 egg whites or egg substitue equivalent to 1 egg1/3 c. non-fat milk2 c. coarsley chopped chicken without skin (8 oz)4 green onions, sliced1/4 tsp. dried sageVegtable oil spray (optional)

Prepare corn muffin mix according to package but use egg substitue or egg whites and non fat milk. Fold chicken, green onions and sage into batter.Spray 6 muffin cups with vegtable spray or line with bake cups. Spoon batter into cups. Bake for 20 min. at 400
