1 large bell pepper, diced
1 large onion, diced
1 T. finely diced garlic
2 T. oil
3 c. 1/2-inch cubed ham
4 cans dark kidney beans
Cooked rice

Directions:
Directions:
Saute bell peppers, onions and garlic in oil until soft. Add ham and beans (and a little water if needed). Simmer 15 minutes. Serve over cooked rice.
