1 pint sour cream
1 pkg of Old El Paso Taco seasoning (preferred)
2 avocados
1 lemon
1 very small onion
1 clove garlic chopped
1 sprig of cilantro
1 small green chili
2 cups of shredded Monterey jack cheese
2 cups of shredded cheddar cheese
3 scallions sliced
3 tomatoes, seeded, and diced
1 can of pitted black olives sliced

Directions:

Mix sour cream with taco seasoning and spread over the bottom of a deep platter. Pit avocados and spoon out insides and put in a blender or food processor with chopped onion, green chili pepper, and garlic. Squeeze in juice of lemon and a sprig of cilantro. When it is of a smooth consistency spread over the sour cream mixture leaving 1/2 inch edge or orange sour cream mixture showing. Next spread the Monterey jack, leaving an edge of the green avocado showing, next the cheddar, continuing to leave an edge of the previous mixture. Next tomatoes, green onions, end with black olives.

This should come out like a mountain, leaving each layer wider than the next. It's a beautiful presentation and everyone loves it. You can lighten by using fat free sour cream, low fat or non fat cheeses. The round tortilla chips or scoops work great with this one. You will have to topple your work of art down and enjoy. My close friend Vicky from Lorain, OH introduced me to this dip at her bridal shower. I have been making it since. My boys like me to add seasoned ground beef or shredded seasoned chicken for game time! I prefer it lighter and without the meat. Serves 10.
