2 Tbsp. Bacon Drippings
1 Cup Rice, uncooked
1 Sm. Onion, chopped
1/2 Green Pepper, chopped
2 Tsp. Salt
2 Tsp. Chili Powder (less for mild rice)
1 Cup Tomatoes, chopped
2 Cups Boiling Water

Directions:
Directions:
Combine all ingredients and microwave in covered container 25 minutes. Let stand 10 minutes. May also bake 40 minutes at 350, or use rice cooker.
