1 (5-6lb.) Pumpkin
1 Onion, chopped
2 Tbsp. Vegetable Oil
1-1/2 Lbs.Ground Beef
2 Tbsp. Soy Sauce
2 Tbsp. Brown Sugar
1 (4oz.) Can Mushrooms, sliced, drained
1 (10-1/2oz.) Can Cream of Chicken Soup
1-1/2 Cups Rice, cooked
1 (8oz.) Can Water Chestnuts, sliced, drained

Clean pumpkin. Draw a Jack-O-Lantern face on the outside of the pumpkin with a permanent marker. Add 1/2 cup water to the inside and microwave 20-25 minutes on full power. Sauté onions in oil until tender. Add meat and brown. Drain, then add soy sauce, brown sugar, mushrooms, and soup. Simmer 10 minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon mixture into the pumpkin. Replace top and place on serving plate. Microwave about 10 minutes or until pumpkin is done and filling is hot. To serve, scoop out filling and pumpkin, too. Serves about 10.
