1 16ox bag dry black beans
2 large onions chopped finely
2 large sweet green peppers chopped finely
8 cloves garlic, chopped
2 tbsp salt, more or less to taste
8 oz olive oil
6 bay leaves
4 tbsp vinegar

Directions:
Directions:
Wash and soak beans for 1 hour. Pour off water and add about 3 quarts cold water (have kettle on with hot water to add as needed). Cover and bring to a boil and add chopped onion, green pepper, garlic and salt. Cook covered on medium heat about 1-2 hours, stirring often, until beans start to soften. Add olive oil and cook until beans are soft and creamy, adding hot water as needed and stirring often. Add vinegar when almost ready to remove from heat. Add additional salt if needed. Entire cooking time may take 3 hours or more. Serve over rice. Leftovers can be frozen.
