2 eggs
1/3 c. water
1/2 c. oil
1 1/2 c. sugar
1 c. pumpkin
2 tsps. vanilla
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon

Directions:
Directions:
In large bowl, mix together flour, soda, and spices. In a separate medium-sized bowl, mix eggs, water, oil, pumpkin and vanilla until well blended. Make a well in the center of the dry ingredients and add the pumpkin mixture to the flour mixture. Stir just until blended. Add 1/2 c. pecans or walnuts if desired. Pour into greased loaf pan and bake at 350 degrees for 50-60 minutes.
