6 bacon strips, diced
1/4 c. chopped onion
1 (10-oz.) pkg. fresh spinach, chopped
2 c. soft bread crumbs, divided
2 c. milk
2 eggs, beaten
1/4 c. butter, melted
1/2 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
In a skillet, cook bacon until crisp. Remove to a paper towel to drain. Saute onion in the drippings until tender. Place spincah and small amount of water in a saucepan; cover and cook until tender, about 8 minutes. Drain well: place in a large bowl, add onion, 1 1/2 c. bread crumbs, milk, eggs, butter, salt and pepper. Pour into a greased 2-qt. baking dish. Top with the bacon and remaining crumbs. Bake uncovered at 350 for 50-60 minutes or until a knife inserted near the center comes out clean.
