1 c. warm water (about 100 degrees)
1/4 tsp. sugar
1 envelope dry yeast
3 c. flour
1 tsp. salt
1 T. olive oil

Directions:
Directions:
In a small bowl, combine 1/4 c. water with sugar and yeast. Let stand in a warm place for 10-12 minutes. In another bowl, combine flour and salt, Make a well in flour add proofed yest, remaining 3/4 c. warm water and olive oil. Begin mixing flour and liquid together with your hand; mix until you form a dough that cleans sides of bowl. Clean off hands and lightly flour a work surface. Place dough on surface and begin to knead with the heel of your hand. Knead 5-8 minutes or until dough becomes smooth and elastic. Put dough into a clean bowl and let rise, covered with a kitchen towel in a warm place for 1-2 hours or until doubled in bulk. At this point, punch dough down with fist. Knead 1 minute. You are now ready to shape dough according to recipe. If only making one pizza use half of dough and wrap remaining piece to freeze for future use.
