1/2 C chopped onion
1/2 C chopped celery
1/2 C chopped green pepper
2 cloves garlic, minced
1/3 C butter or margarine, melted
1/4 t dried whole thyme
1/4 t chili powder
1/2 t dried whole basil
2 T all-purpose flour
1 t tomato paste
1/2 C fish or seafood stock
1/2 C Chablis or other dry white wine
1 10oz can cream of mushroom soup, undiluted
2 1/2 C peeled crawfish tails
1/2 C chopped green onions
1/4 C chopped parsley
1/4 t Creole seasoning
1/4 to 1/2 t hot sauce
Garnish: chopped green onions

Directions:
Saute first 4 ingredients in butter until tender. Add thyme and next 4 ingredients; stir well, and cook 15 minutes, stirring often. Add fish stock and Chablis; cook 10 min. Stir in mushroom soup and crawfish tails; cover and simmer 15 to 20 minutes. Stir in 1/2 C chopped green onions and next 3 ingredients; cover and cook 3 to 5 minutes. Remove from heat, and let stand 15 minutes before serving. Garnish, if desired.
