2 1/2 c. all-purpose flour
2 c. granulated sugar
1 1/4 c. salad oil
1/3 c. milk
2 tsp. double acting baking powder
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 eggs
3 c. finely grated carrots
1 c. pecans, chopped

Fluffy Cream Cheese Frosting (see recipe)

Directions:
Directions:
Preheat oven to 325. Grease 10-inch tube/bundt pan. Into large bowl, measure first 9 ingredients with mixer at low speed; beat until just mixed. Increase speed to high and beat 5 minutes, occasionally scraping bowl with rubber spatula. Stir in carrots and pecans. Pour into pan. Bake 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on wire rack 10 minutes; remove from pan and cool completely.

Frost cake with Fluffy Cream Cheese Frosting.
