Ingredients:  
1 small eggplant (cubed)
1 small onion (sliced)
1 large or 2 small zucchini (sliced)
1 red pepper (sliced)
1 (23 oz.) can tomatoes (sliced plum or diced)
4 cloves crushed garlic
1 bottle Italian dressing
1 tsp. garlic powder
1 tsp. dried oregano
Olive oil

Directions:
Directions:
In frying pan saute onion, garlic and red pepper in 1 T. olive oil. Add zucchini and cubed eggplant. Pour c. Italian dressing over vegetables. Add canned tomatoes, cover and simmer on low heat for 10-15 minutes.
