5 tbsp bacon fat
5 tbsp flour
2 cups chopped onions
2 cups chopped celery
1/2 cup green pepper
2 cloves chopped garlic
1 large can tomatoes
1 can tomato paste
Salt & Pepper
1 tbsp sugar
5 lbs peeled shrimp

Directions:
Directions:
Combine onion, garlic, celery and green pepper and set aside.

Heat 5 tbsp bacon fat on high heat till hot; add flour, stirring until roux is dark red-brown but not burned. Reduce heat to medium and quickly add onion, garlic, celery and green pepper to the roux. Stir until onions are translucent. Stir in tomatoes and tomato paste. Cook a few minutes; season with salt, pepper and sugar. If you like it spicy, add cayenne pepper, tobasco or other hot sauce to taste. Add remaining ingredients & cook 20 minutes or until shrimp is done.
