c. of onions, chopped
2 garlic cloves, minced
1 roma tomato, diced
c. of pepper, chopped (optional)
1 T. oil
1 c. of lentils, uncooked and washed
3-4 c. of hot water
1 c. of rice, uncooked (rice of your choice)
3 T. of scallions or green onions, finely chopped (for garnish)
Fresh lemon juice, for taste
Salt and pepper to taste
Caramelized onions (optional)

Directions:
Lightly saute the onions, garlic, tomato, and peppers in olive oil. Once onions are transparent add dry lentils, stir carefully. Add water and cook for about 30 minutes, stirring occasionally. Add rice and may need an additional c. of water to ensure that rice will be cooked. Stir completely, once it reaches boiling again, decrease the temperature to low, cover and let cook until done (about 20 more minutes). Serve warm. Enjoy it with caramelized onions or fresh lemon juice or freshly made salsa!
