1 (15 oz) can garbanzo beans, drained and rinsed
3 T. of scallions or green onions, finely chopped
c. of onions, finely chopped, optional
3 medium ripe tomato, seeds removed and chopped
medium cucumber, seeded and cut at about 1/2 inch pieces
c. of green peppers, chopped
fresh lemon juice from 2 lemons
c. chopped fresh parsley or cilantro (depends on the taste you prefer)
2 T. of extra virgin olive oil
Salt and pepper to taste
c. feta cheese and/or minced garlic and/or colorful peppers (optional)

Mix all ingredients carefully. Chill and serve on a bed of lettuce.
