2 Cylinders Ritz Crackers (2 1/2 c.) Save 1/2 c. for later)
1 Stick Margarine (softened)
1/2 gal. Vanilla Ice Cream
2 pkgs. Instant Pudding (Coconut Cream or Toasted Coconut Flavor)
1/2 c. Milk
1 c. Coconut

Crust:
Crush the Ritz crackers. Put aside 1/2 c. Mix the remainder of crushed crackers with margarine. Press mixture into a 9 x 13 inch pan. Chill for one hour.

Filling:
Soften ice cream in blender with pudding and milk. Spread over chilled cracker mixture in pan. Sprinkle the saved 1/2 c. of crushed crackers over the top. Toast 1 c. coconut under broiler & sprinkle over top of mixture in pan.

Refrigerate overnight. Cut into squares.
