2 Egg Whites (at room temp.) 3/4 c. Sugar 1 (6 oz.) pkg. Chocolate Chips Green Food Coloring 4 Drops Mint Extract
Preheat oven to 375º. Beat egg whites until they form a peak. Add 3/4 c. sugar - gradually. Fold in chocolate chips. Add green food coloring and mint extract. Drop by the tsp. onto ungreased cookie sheet forming a peak. Place in preheated oven. TURN OVEN OFF and leave cookies in oven overnight with the door closed.
