4 Chicken Breast (boneless, skinless)
Teriyaki Sauce (as needed)
Pineapple Juice (as needed)
1 tsp. Ginger (minced)
1 T. Scallions (thinly sliced on the bias)
4 Slices Pineapple (peeled & cored, cut in 1/2 inch slices
4 Slices Provolone Cheese (medium, sliced)

Directions:
Directions:
Pierce chicken breasts with fork several times to ensure marinade will soak into the meat. Place in a pan and cover with 1/2 teriyaki sauce & 1/2 pineapple juice. Add ginger and scallions. Allow chicken to marinade for about 1/2 hour. Remove chicken breasts from marinade and pat dry. Grill until cooked thoroughly (165). Meanwhile, grill sliced pineapple until heated through. Place grilled pineapple on top of chicken breast. Top each chicken breast with a slice of provolone cheese. Serve immediately.
