3 c. Diced Potato (all purpose bakers)
1 c. Celery (diced)
1/2 c. Chopped Onions or Leeks
1/2 c. Diced Pimiento
2 c. Water
2 T. Flour
4 T. Butter
4 c. Hot Milk
Salt & Pepper to taste

Directions:
Directions:
Combine potatoes, celery, onions, pimiento, salt, pepper, and water. Cook slowly until potatoes are tender. Blend flour and butter,. Add a little hot milk, stirring constantly until a smooth, runny consistency. Add to potatoes. Add the hot milk, stirring constantly. Cook 5 minutes - do not boil.
