1 T. Curry Powder
1 c. Chopped Yellow Onion
2-3 Cloves Garlic, Crushed
1 c. Broccoli Florets (optional.)
10 oz. Frozen, Chopped Spinach (thawed)
1 (16 oz.) Can Tomato Sauce
1 (19 oz.) Can Chickpeas (Garbanzo Beans)
1-2 Cubes Vegetable Broth

Directions:
Directions:
Saute onion, curry powder, broccoli and garlic with oil. Add spinach, tomato sauce, chickpeas, and broth. Simmer 10-15 min. Add pepper to taste and serve over rice or couscous.

This is a quick, tasty, healthy recipe. Chickpeas and onion lower cholesterol, tomatoes contain lycopene (an anti-oxidant), and spinach contains flavonoids (which provide anti-cancer benefits).
