1 lb. boneless skinless chicken breasts, cut into bite sized pieces
1 head of broccoli, florets only
4 pkgs. of Raman noodles
4 T. peanut oil
1/4 c.soy sauce
3 T. white sugar
4 T. white cooking wine
2 garlic cloves, minced
1 "finger" of ginger, minced or 1 T. powdered ginger
2 scallions, sliced

In a glass bowl, combine peanut oil, soy sauce, sugar, and white wine. Add chicken pieces and stir to coat. Marinate for one hour if possible. Steam broccoli florets; meanwhile take the spice packet out of the Raman noodles, break the brick of noodles several times, bring a medium/large pot of water to a boil and boil the Raman noodles for 3 minutes; drain. Meanwhile, stir-fry the ginger, garlic and scallions in a little bit of peanut oil for 30 seconds; add the chicken and marinade and stir-fry until chicken is done. Combine the chicken and juices with the Raman noodles and broccoli and serve immediately.
