1 medium onion, chopped
1 tbsp extra virgin olive oil
3 garlic cloves, chopped
1 1/2 pounds lean ground beef
1 26-ounce jar of pasta sauce
1 teaspoon salt
1/2 teaspoon italian seasoning
1/2 teaspoon fresh thyme
1 16-ounce box of ziti pasta
3 tbsp butter
3 tbsp all-purpose flour
1 1/2 cups milk
1 8-ounce container ricotta cheese
1 cup grated Parmesan cheese
1/2 tsp freshly cracked black pepper
1 8-ounce package of shredded mozzarella cheese

Saute chopped onion and garlic in a large skillet over med-high heat for 5 minutes or until tender. Add the ground beef and stir until beef crumbles and is no longer pink. Drain the mixture and return to the pan. Stir in pasta sauce, 1/2 teaspoon of salt, 1/2 teaspoon fresh thyme and 1/2 teaspoon Italian seasoning. Set aside. Cook pasta in a large Dutch oven according to the box directions. Drain pasta. Melt butter in the Dutch oven over low heat; whisk in flour until it is smooth. Cook, stirring constantly, 1 minute. Gradually whisk in milk and ricotta cheese over medium heat until thick and bubbly. Stir in Parmesan cheese, remaining 1/2 teaspoon salt and freshly cracked pepper. Add pasta back to Dutch oven and mix in with the milk and cheese mixture until all pasta is evenly coated.
Pour pasta into a greased 9 X 13 glass baking dish. Pour meat and pasta sauce over the pasta and cheese mixture. Add shredded mozzarella to the top and bake at 350 degrees for 20-25 minutes or until mozzarella is brown and bubbly.
