3 eggs, beaten until foamy
2 c. sugar
1 c. oil
1 T. vanilla
2 c. flour
1 T. cinnamon
2 tsp. baking soda
1 tsp. salt
2 c. shredded zucchini
1 c. chopped walnuts

Preheat oven to 350. Beat eggs, sugar and oil together until thick. Stir in vanilla and dry ingredients, then add in zucchini and nuts. Bake in greased and floured bread pans for 45 minutes, or until done.
