35 - 40 fresh large jalapeno peppers
3 carrots, sliced in 1 1/2" sections, then quartered
2 med. yellow onions, sliced thin
1 1/2 c. each white vinegar & water

Directions:
Directions:
In 6 pint jars, put 1/2 t. salt, 1/2 t. minced garlic & 1 t. olive oil.

Scald peppers until they begin to lose their shine. Scald carrots appx. 1 min.

Pack peppers, onions, & carrots tightly in scalded jars. Bring vinegar & water to a boil & pour over peppers to within 1/2" of jar top. Clean edges of jars & cover with lids that have been scalded. Seal and place in a water bath for 10 mins.

For all children who are too young to know: To water bath, put jars in a deep pot with a rack in the bottom. Cover with hot water & bring to a boil. Place lid on pot and low boil for 10 mins.
