6 large red potatoes
5 - 6 green onions, tops & all chopped
1/2 stick of butter or margarine
1 can sliced mushrooms
1 can cream of mushroom soup
1 small carton of whipping cream
1/2 t. salt
1/2 t. pepper
1 t. parsley flakes

Directions:
Directions:
Par boil, peel, & slice potatoes into rounds. Saute onions in margarine. Add mushrooms & soup. Heat to a low simmer. Remove from heat & add cream, salt, & pepper. Sitr until smooth. In a buttered dish, place potatoes with soup poured over them. Sprinkle with parsley. Bake @ 350 for 30 - 45 mins.

Be sure to use red potatoes, russets don't hold their shape as well. Easily doubled for a crowd.
