1 bag sauerkraut, rinsed & drained
1 onion, chopped
1 green apple, skinned and chopped
2 to 3 lbs. country style pork ribs, pork butt roast
1 cup beer for Crock Pot, balance for the cook
1 tsp of caraway seeds (optional)

Directions:
Directions:
Put sauerkraut in bottom of slow cooker/Crock Pot. Add diced onion and chopped apple and caraway seed. Stir and top kraut mixture with pork. Pour beer over all. Cook for 6 to 8 hours on low. Serves 8.

This is really good. I also make in oven in a heavy Dutch oven and add more beer as it cooks in a 325 degree oven for 3 hours or so. You can do on stove top as well. My sons love this with homemade dumplings found in this book. I could live on the kraut and forget the pork!
