1 large eggplant, about 2 pounds
3/4 cup olive oil
2 cups pureed San Marzano or quality plum canned Italian tomatoes
1 teaspoon dried basil
1 teaspoon garlic powder
1/2 cup grated Parmesan cheese
8 ounces shredded Mozzarella cheese

Slice eggplant into 1/4 inch slices. Lay out on towels and salt, cover with another towel. Let sit for 1/2 hour and then squeeze out excess moisture. Fry on both sides in skillet in hot oil until browned. Drain well on paper towels. Place a layer of eggplant slices in a shallow baking dish; cover with some tomato sauce, a sprinkling of basil and garlic powder, a little Parmesan cheese, and a little of Mozzarella cheese. Repeat layers until all ingredients are used, ending with Mozzarella cheese. Bake, uncovered, at 400 for 20 minutes or until cheese is bubbling.

For crispier eggplant, dip in flour seasoned with salt and pepper. Next dip in a beaten egg and coat in seasoned bread crumbs. Shake off excess crumbs and fry on each side until golden brown. Then proceed to prepare for oven baking according to recipe directions. Serves 6

Melanzana is a must have at least 4 times a year. Even my kids like the sweet taste of eggplant... again, because if a vegetable is smothered in cholesterol it is good! However, you can really lighten up an eggplant dish by omitting the frying. Try spraying lightly with olive oil cooking spray and broiling and then proceeding with the sauce and the Parmesan and some skim or fat free mozzarella. It's still delicioso!
