Classic Bruschetta

1 Asiago Cheese bread or crusty Italian Bread
6 whole garlic cloves
8 Roma tomatoes
1 cup fresh basil, coarsely chopped with a knife
4 teaspoons olive oil
Salt and freshly ground black pepper, to taste

Directions:
Directions:
Preheat oven or grill to 400. Slice the bread into 1/2-inch pieces. Toast on baking sheets in the oven, or grill, until golden brown, about 5 minutes per side. Roughly rub garlic cloves onto the toasted bread. Cut the tomatoes into small cubes and toss with the basil and oil. Season with salt and pepper. Set aside for 30 minutes to 1 hour to allow the flavors to combine. Evenly distribute the tomato mixture over toast slices and serve immediately. If you let the bread sit too long with the tomato mixture on it, the bread will become very soggy. Sprinkle with fresh grated Parmesan.

This is great in the summer time, especially because you can also do on an outdoor grill. Once bread is toasted and rubbed with garlic, I will then brush with olive oil on one side, place thinly sliced provolone or mozzarella and one whole basil leave and a slice of tomato drizzled with oil and salt an pepper and place back on grill for a minute or two to slightly melt the cheese. Serves 6.
