2 tablespoons olive oil
1/2 stick (1/4 cup) unsalted butter
2 medium shallots, thinly sliced crosswise
(yellow onion can be used in place of, but add 1 tsp of finely minced garlic in as well)
8 oz sliced fresh Crimini mushrooms
5 oz sliced fresh Shitake mushroom, caps only
1/2 cup dry white wine
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup coarsely chopped fresh flat-leaf parsley
1 lb of fresh or store bought, cheese ravioli

Heat oil and 2 tablespoons butter in a 12-inch heavy skillet over moderately high heat , don't let butter brown. Then add shallots, stirring, until golden, about 2 minutes. Add mushrooms and increase heat to high, then sauté, stirring, until liquid mushrooms give off is evaporated and mushrooms are golden, about 4 minutes. Add wine and boil until liquid is evaporated and mushrooms are tender, about 2 minutes. Stir in salt, pepper, parsley, and remaining 2 tablespoons butter until butter is melted. While mushrooms are sautéing, cook ravioli or pasta in a large pot of boiling salted water, stirring occasionally, until ravioli are al dente. Drain in a colander. Return drained ravioli to large pot and add mushroom mixture, stirring gently until combined. Serves 4

This is a great alternative to spaghetti sauce and makes a great side with meat like duck or veal. It's quick and easy, particularly if you buy store bought ravioli. One tip, if you do buy store bought, stay away from frozen ones and go for semi-homemade styles in the fresh section or go to an import store or it isn't the same. You can get away with the heavy frozen kind for spaghetti sauce but not for this type of light sauce. Makes enough for 4 people as a main meal, 8 for a side dish. Can also use Rigatoni or Orachetti. Great on roasted chicken too!
