Black Bottom Cupcakes Recipe

8 oz cream cheese at room temperature
1 egg
1/3 c sugar
1/8 tsp salt
1 c semi sweet chocolate chips

1 1/2 c flour
1 c sugar
1/4 c cocoa
1 tsp baking soda
1/2 tsp salt
1 c water
1/3 c oil
1 T white vinegar
1 tsp vanilla

Combine 1st 4 ingredients in bowl. Beat well with mixer.
Stir in chocolate chips. Set aside
Mix flour, sugar, cocoa, salt and baking soda. Stir in water, oil, vinegar and vanilla. Beat well.
Fill muffin cups 1/3 full with chocolate batter.
Top each with a heaping teaspoon of cream cheese mixture. Sprinkle a little granulated sugar on each cupcake.
Bake ar 350 for 30-35 minutes. Be sure to bake the day before you want them because they must stand at least 8 hours before eating. Keep refrigerated.
