2 lb. carrots, peeled, ends trimmed, cut into 4 inch long sticks, 1/3 inch wide
3 tbsp. minced fresh ginger
2 tbsp. pure maple syrup
4 tsp. fresh lime juice
4 tbsp. unsalted butter 2 tbsp. extra-virgin olive oil
1 1/2 tbsp. water
kosher salt

Directions:
Directions:
In a small bowl, combine maple syrup, 1 1/2 tbsp. water and lime juice, then set aside. In a medium straight-sided saute pan, heat olive oil and 2 tbsp. butter over medium high heat. Add carrots and 1 tsp. salt. Toss to coat carrots then cook stirring often, until browned and tender, 8-10 minutes(do not over cook or burn).
Reduce heat to low, add remaining 2 tbsp. butter and ginger, scraping and stirring for 30 seconds. Remove carrots to serving platter and scrape sauce out of bottom of pan over the top.
