9-in double pie crust
1 20-oz. can pitted sour cherries
3/4 c. sugar
1/3 c. all-purpose flour
1/8 tsp. salt
2 T. butter
1/4 tsp. almond extract
1 egg yolk

Directions:
Directions:
1. Preheat oven to 425. Make pastry and refrigerate.
2. Drain cherries, reserving 1 c. liquid. In a saucepan combine sugar, flour and salt. Stir in cherry liquid and bring to a boil, stirring often. Reduce heat and simmer for 5 min. Mixture will thicken.
3. When mixture is thickened, add butter, almond extract and cherries. Cover and refrigerate.
4. On lightly covered surface, roll out half of the pastry into an 11-in. circle. Put into 9-in. pie dish. Roll other half of pastry into another 11-in. circle. With a knife or pastry wheel, cut eight 1/2-in. strips.
5. Pour cherry filling into pie dish. Place pastry strips horizontally, then vertically, across the top of the pie and lightly brush with egg yolk. Bake 30 to 35 min., and cool before serving.

I found this recipe on the Internet and made the pie as a surprise for Brock on his birthday (2/9) the first year we were married. Cherry pie is his favorite dessert. It was yummy, so now I make it for him every year.
