3/4 cup sugar
3 tablespoons flour
1/8 teaspoon salt
1/4 cup cherry juice
3 1/2 cups sour pitted cherries (fresh ones work best)
1 tablespoon butter
1/2 teaspoon almond extract
5 drops red food coloring

Two 9" pie crusts (you will use the 2nd pie crust for the top)

Directions:
Directions:
Combine sugar, flour and salt in a saucepan. Stir in the cherry juice and food coloring. Add cherries. Cook over medium heat until mixture has boiled 1 minute. Stir often. Remove from heat and stir in butter and almond extract. Set aside to cool. Pour cooled filling into a 9" pie crust. Cover the cherries with the 2nd pie crust; OR cut 2nd pie crust into 1/2 strips. Cover the cherries by criss-crossing the pie crust strips in a lattice design. Seal the pie crust edges by pressing the top crust down into the edge of the bottom crust with your index finger. Bake at 400 degrees for about 30 minutes or until desired browness.
