2 lbs. beef sirloin
1 c. chopped onion
1/2 c. green bell pepper
2-4 tbsp. of jalapeños chopped
1 tsp. salt
1 tsp. pepper
1 tsp. cumin
1 tsp. garlic powder
1 tsp. chili powder
2/3 c. milk
1 can rotel
1 can broth
1 c. cheese
12 corn tortillas

Cook beef over low heat with water until fork tender about 30-45 minutes. Place steak on hard surface and shred by pulling apart with two forks. Prepare a large skillet with non-stick cooking spray. Saute onions and peppers with dry ingredients until translucent. Add rotel, beef broth, and milk. Simmer and stir in cheese until melted. Pour into casserole dish and bake 350º for 30 minutes.
