5 fresh chicken breast fillets
1 can pineapple slices
2 cloves garlic, pressed
salt
1 tablespoon vegetable oil
1/4 cup honey
2-4 tablespoons of lime juice (fresh is best)
2 tablespoons of soy sauce
2 tablespoons cornstarch
grated peel from 2 limes

Directions:

Rub chicken breasts with garlic and sprinkle with salt. Drain pineapple keeping the juice. In a large skillet, brown chicken well in hot oil. Add 1/4 cup of pineapple juice to skillet. Cover and simmer 6 minutes or until cooked through. Combine remaining pineapple juice, honey, lime juice, soy sauce, and cornstarch in saucepan. Cook, stirring until sauce boils and then boil 1 minute. Add pineapple to sauce and heat. Spoon sauce with pineapple over chicken. Sprinkle with lime peel.
