4 cups flour
2 eggs
1 cup warm water
1 tbsp salt

Cheese Filling:
1 pound ricotta cheese
4 oz grated Mozzarella
3 tbsp grated Parmesan
2 tsp sugar
1 egg slightly beaten
1 tbsp parsley
1/4 tsp salt
1/4 tsp pepper

Mix all ingredients for dough and knead into a ball. Add flour if sticky. Set dough aside to stand for 10 minutes.

Using a mixer, combine/beat all ingredients for cheese mixture until well blended.

Roll out dough as thin as possible. Scoop small amounts of cheese mixture in balls a few inches apart from each other on one half of the dough sheet. Fold over the other half of the dough sheet on top of cheese balls. Use Ravioli press or knife to cut raviolis apart. Press ends of dough together with fork if you do not have a ravioli press.

Freeze immediately for future use or boil until they float on the water. Drain and serve.

Personal Notes:
Raviolis can be served with a tomato-based sauce or with butter & parsley flakes. Great with Italian bread and red wine.
