Sweet Potato Pie Recipe

2 small sweet potatoes = 1 lb. peeled
1 1/2 cups Half 'N Half
3/4 cup packed brown sugar
3 large eggs
1 tsp. cinnamon
3/4 tsp. ginger
1/2 tsp salt
1/4 tsp. nutmeg
1 baked pie shell

Bake pie crust until golden brown. Cover edges to avoid burning. Let cool before adding in pie mixture.

Boil potatoes until fork tender. Let them cool . Then add in half n half. Mix together until most of the lumps are gone. Strain mixture through metal sieve. Use spatula to help press mixture through. Discard what is left in the sieve after straining.

Add remaining ingredients: brown sugar, eggs, and spices. Mix well until light and fluffy.

Fill pie shell to desired height. Note: Pie will rise during baking so avoid overfilling.

Bake 40 minutes at 350 degrees. Keep pie edges covered to avoid burning..
