3 Eggs
1 3/4 Cup Sugar
2 Cups Grated Zucchini
3 Cups Flour
1/2 Tsp. Baking Powder
1 Tsp. Baking Soda
1 Tsp. Cinnamon
2 Tsp. Vanilla
1 Cup Chopped Walnuts

Directions:
Directions:
Preheat oven to 350
Grease and flour (2) 8x4 inch loaf pans.

Mix together oil, eggs and sugar; blend well. Add zucchini. Stir in flour, baking powder, baking soda, cinnamon and vanilla; mix well. Stir in walnuts. Pour mixture into pans and bake for 50-60 minutes or until toothpick comes out clean.
