5 lbs potatoes, peeled and cut into large chunks
1/4 c. grated onion
2 T butter + 1/4 c butter, softened and separated
5 cloves garlic, minced
2 c. sour cream
2 tsp salt
1/2 tsp pepper

Directions:
Directions:
Cover potatoes with water and boil until tender; drain. Mash well; set aside. Microwave onion and 2 T butter for 2 minutes. Add minced garlic to butter and onion. Microwave for 1 minute and add to potatoes. Stir in sour cream, 1/4 c butter, salt and pepper. Spoon into a large casserole dish. Bake, covered, at 325 for 35 minutes.
